This flour has both a high protein and a high fat content. However, some soy four is made of beans from which the fat gas been largely expressed, when it is known as soybean low fat flour.
Soy flour is available in three forms:
*Full fat soy flour
*Low fat
*Defatted soy flours
Full-fat soy four is made from whole soybeans that have been hulled, cracked and heat treated to remove the beany flavor as well as to increase the value of the protein and deactivate certain enzymes that cause deterioration. It retains all of the original fat content of the soybean.
Defatted soy flour is a finely granulated product obtained by grinding hulled soybeans after oil extraction.
Cakes, biscuits and cookies can be made from soybean flour. Due to the fat content, it is not mixed with dry ingredients but is creamed with shortening or blended with the liquids.
Because soy flour is gluten-free, it’s good alternative for individuals with celiac disease.
